CARROT CAKE

 

3 c. grated carrots

2 c. sugar

2 c. flour

4 eggs

1 ½ C. oil

8 oz. pkg. cream cheese

2 tsp. baking soda

2 tsp. salt

1 tsp. cinnamon

1 tsp. vanilla

1 c. chopped walnuts

 

Beat together first 6 ingredients. Add soda, salt, cinnamon, vanilla and nuts and mix well. Bake in greased & floured 13x9x2 pan at 350 degrees for 55 minutes or until a toothpick inserted in the center comes out clean.
